Chorizo and Saint Angel Original madeleines

Ingredients
- 1.5 cups (225g) of Flour
- 1 tsp of baking powder
- 3.5 oz (100g) of Saint Angel Original
- 3 eggs
- 1/2 cup (120 ml) of Milk
- 2 oz (56g) of mild chorizo sausage
- Salt

Method
- Preheat the oven to 230°C (450°F).
- Dice the Saint Angel Original cheese and chorizo sausage.
Mix the flour, baking powder, eggs, milk and a pinch of salt together in a bowl. - Add the Saint Angel Original cheese and chorizo sausage using a spatula.
- Pour the batter into mini-madeleine moulds, to 3/4 height, then bake the madeleines in the oven for around 5 minutes (or until they start to turn golden brown).
- Remove from moulds and serve warm as an appetizer.
