Chorizo and Saint Angel Original cheese madeleines

Ingredients

  • 1.5 cups (225g) of Flour
  • 1 tsp of baking powder
  • 3.5 oz (100g) of Saint Angel Original
  • 3 eggs
  • 1/2 cup (120 ml) of Milk
  • 2 oz (56g) of mild chorizo sausage
  • Salt

Method

  1. Preheat the oven to 230°C (450°F).
  2. Dice the Saint Angel Original cheese and chorizo sausage.
    Mix the flour, baking powder, eggs, milk and a pinch of salt together in a bowl.
  3. Add the Saint Angel Original cheese and chorizo sausage using a spatula.
  4. Pour the batter into mini-madeleine moulds, to 3/4 height, then bake the madeleines in the oven for around 5 minutes (or until they start to turn golden brown).
  5. Remove from moulds and serve warm as an appetizer.
